fix(cypher literals): fixing cypher literal creation

Can't replace 'cypher_string_literal' with 'normalize_identity_text',
otherwise, the resulting queries stumble over single
quotes (apostrophes) in values.

also bumped min versions for bento-meta and bento-mdf in pyproject.toml
