fix(db): run on the declared 4.x MongoDB driver only (#185)

RegistryDB created its client with the legacy com.mongodb.MongoClient,
which comes from mongo-java-driver 3.12.14, the all-in-one jar that
nanopub-java pulls in. The declared mongodb-driver-sync 4.11.5 was on
the classpath as well, with overlapping com.mongodb and org.bson
classes, so which version a class came from depended on classpath
order.

The client is now com.mongodb.client.MongoClient from MongoClients, and
mongo-java-driver is excluded from the nanopub dependency, leaving the
4.x driver as the only one. The rest of the code already used the
com.mongodb.client API, and the tests only needed the new import.
