Say in the 1.x upgrade guide what else behaves differently (#2381)

The guide listed renamed commands and flags but left out changes a 1.x
user meets on the first day, several of which break a CI job or a team
mid-move without an error that names the cause:

- a conversion removes the 1.x files it carried, so a converted project
  no longer builds with 1.x and a team moves together;
- converting airflow_settings.yaml values needs a reachable OS keyring,
  and on a headless machine init fails before it writes anything;
- a deploy with no terminal never picks a Deployment, where 1.x picked
  the only one under an API token or auto_select, and a default link
  only preselects the prompt;
- deploy no longer parses DAGs or refuses uncommitted changes first;
- an Airflow 2 project deploys to Astro only from a declared Dockerfile
  (#2379);
- standalone mode is Linux and Apple-silicon macOS only;
- local schedules are off, start opens no browser, Docker mode starts on
  a new metadata database and waits on healthchecks (rootless Podman
  without systemd never runs them);
- workspace delete asks to confirm;
- the -o json shapes 1.x printed are snake_case and keyed, failures are
  one object with a kind, and usage errors exit 2.

The Commands and Flags tables are left to a separate change.
