fix: capitalize nested spec keys when flattening parameters (#517)

## What
Closes #513.

## Why
`flattenMap` capitalized leaf and array keys (`specImage`, `specTags0`)
but not the keys of nested maps, so `spec.foo.bar` became `specfooBar`.
`workflow-parameters.md` documents `specFooBar`. The unit tests asserted
the lowercase output and are updated.

## Testing
`make test`

## Notes for reviewers
Breaking for WorkflowTemplates that read parameters of nested spec
fields under the lowercase names: `specfooBar` becomes `specFooBar`. No
example or fixture in the repo uses nested spec fields. Upgrade path:
rename the parameters in affected templates.
