chore(grpc): remove installation id and service name from grpc client options (#6879)

## Summary
Remove the `InstallationID` and `ServiceName` from the client options.
It looks like these fields were only ever written to and never read, so
basically didn't do anything, though it did lead to unnecessary churn on
the outbound connection.
