* INFRA-697 handle multi-line symlink files

Why these changes are being introduced:
* It was recently discovered that symlink.txt files can contain multiple parquet file URIs on separate lines. Previously, the notebook was only expecting a single parquet file URI.

How this addresses that need:
* Update get_parquet_uris_from_symlinks function to parse contents of symlink.txt files as multiple lines
* Update dependencies
* Update datetime library import to dt

Side effects of this change:
* NA
