fix(model): check the nested attribute, not its parent, on nested-path updates

$REMOVE of 'a.b' ran the required and default checks on 'a'. A required
parent made the remove throw before any request was sent. A parent with a
default turned the remove into SET a.b = <a's whole default>.

The checks now resolve the nested path in the schema. A path the schema does
not describe has nothing to check.
