docs(oidc): correct the evidence claims

- The interop tests import no third-party OpenID Connect, OAuth 2.0 or
  JOSE library; the client's own go-jose is part of the code under test
  (CHANGELOG, MIGRATION, CLAUDE.md, oidcstack package doc).
- The release checklist says which page each review image shows, the
  conformance run names the commit its review reproduced, and the
  immediate key-rotation variant is covered in CI rather than recorded
  from the suite.
- form_post is refused at New when the provider lists its response
  modes without it; an omitted list is accepted.
- make e2e-saml runs the SAML browser suite; make e2e runs it, then
  e2e/oidc.
