fix: proxy replaces current client on new connection (#73)

* fix: proxy replaces current client on new connection (#71)

A client that timed out and reconnected while its old socket stayed open
was stuck behind it, since clients were served serially. Newest client now
wins: old one's in-flight request finishes, then it's disconnected.

* refactor: split proxy serve, bound client wind-down, add test fixtures

- extract accept() and run_client() from serve
- replaced/shutdown client gets request timeout to finish, then dropped
- document that any new connection replaces the current client
- proxy tests: shared fixtures (Proxy, send_request, connect, CountingSimulator)
