* docs: use the CLI's experimental native stack for local development

Match CI's macOS integration job: start local Supabase with
SUPABASE_EXPERIMENTAL_STACK=1 and --runtime native (no Docker) for local
development, the integration tests, and the Examples app.

scripts/test-integration.sh now mirrors the CI job on macOS, runs the
secure-email-change project too, and stops the stack on failure.

* fix(scripts): set INTEGRATION_TESTS so the integration suites run

Without it every suite skips itself and the script passes vacuously.
CI already sets it.
