fix(acceptance): port endpoint groups and Manila quotasets tests to v2

Both files still imported github.com/gophercloud/gophercloud (v1) paths,
so every functional workflow failed to compile the acceptance packages.
Use the /v2 module, the identity/v3/endpointgroups package, context
arguments, NewSharedFileSystemV2Client, IntToPointer, and resolve the
project ID through Keystone since the v2 ServiceClient has no TenantID.
