feat: sync eXist-db runtime with a live eXist 7 instance (#181)

Replace the doc-scraping generator with scripts/generate-existdb-live.ts,
which asks a running instance via inspect:inspect-module-uri. Regenerate
every built-in module from eXist 7.0.0-SNAPSHOT, add the modules we were
missing (backups, cqlparser, cursor, exrest, http, jndi, lang, plogin, req,
rest, simpleql, sql, ws, xqdm, xslfo, zip) and drop functions the server
does not serve.

Remove the crypto, datetime and httpclient modules: neither eXist 7 nor
6.4.1 serves them.
