test: avoid case-only filename collisions in testdata fixtures (#407)

macOS's default APFS is case-insensitive, so fixtures like
tcp.pcapng.-x.out.txt and tcp.pcapng.-X.out.txt cannot coexist in
the working tree. Git then only checks out one of each pair and the
other appears as modified.

Rename the -X/-XX (hex+ASCII) fixtures with an .ascii suffix so the
names remain unique after case folding, and update the test paths
accordingly. This is a pure rename (no content change).
