fix: contain serializer encode errors so one message can't crash the dispatch (#2345)

A serializer raises on a message it can't encode, such as an event or topic over
the V2 serializer's 255-byte limit. MessageDispatcher let that raise escape dispatch/3,
which for remote broadcasts runs inside the shared GenRpcPubSub.Worker, so a single
oversized event from the REST API or realtime.send could take the worker down.

Wrap the serializer call so it returns {:error, reason}, letting the existing
log-and-skip branch drop just that message and keep the worker alive.

Fixes #2344
