chore(devtools): manual presence controls in the inspector (#2315)

* feat: manual presence controls in the inspector

Presence could only be exercised by a toggle that tracked a random name once
on join, which is not enough to test tracking, updates, untracking or shared
keys by hand while working on presence metrics and tracker changes.

Adds a presence row with a JSON payload field and Track / Untrack / State
buttons, uses that payload (default {"name":"inspector"}) for the auto-track
on join, a presence key field so several tabs can appear as one member, and
a wire protocol version selector so both serializers can be checked. Derived
presence events and raw frames get distinct labels in the event log.

* refactor: drop the protocol version selector from the inspector

Both serializers are already covered by the parameterised integration tests,
so a manual switch is speculative and unrelated to presence. Keeps this change
to presence controls only.
