feat: only accept new trades signed on the newest marketplace

The older off-chain marketplaces are being paused and their contract
signature index bumped, which cancels every trade signed on them, so
POST /v1/trades now takes only trades on OffChainMarketplaceV3.

Older versions are still resolved, so a trade signed on one is refused
with a 400 that names the contract to sign on, not as an invalid
signature. Coupons are unchanged.
