go.mod: move module path to github.com/stripe/smokescreen/v2

The slog migration changes the exported Config.Log and SmokescreenContext.Logger types, so this release line is a new major version. Publishing it under the /v2 path lets downstream builds that share one module graph adopt the slog API without forcing every other consumer of the logrus-based releases to migrate at the same time.
