chore(examples): Give the example projects an outDir, and declare the shared models dependency

Each example gets `outDir: "build"`, so the one thing that made a stray
`tsc` destructive - no output directory, and therefore output written
beside every input - is now answered in the projects themselves as well as
by the `noEmit` above them. `noEmit` still wins while it is there; this is
what the output would land in without it.

`example-customer-mongo` becomes a real dependency of the two applications
that import its models. They resolved it through the `paths` map alone, so
the workspace graph did not know one example needed another.
