feat: replace date-fns dependency with native relative time formatter

Motivation:
The date-fns dependency was used for only a single formatDistanceToNow call in
App.vue. Replacing it with a native function reduces bundle size and eliminates
unnecessary package update requests from Dependabot.

Design Choices:
Implemented a lightweight native formatDistanceToNow utility in
assets/vue/utils/date.js and wrote comprehensive parameterized unit tests in
assets/vue/utils/date.test.js. Cleaned up package.json and ran npm install.

Benefits:
Saves context window memory, eliminates a third-party dependency, reduces
security vulnerability footprint, and prevents Dependabot alerts.
