contracts: replace SpreadBuilder::calendar with long_calendar / short_calendar (#935) (#945)

calendar(near, far) bought near / sold far, so buying the combo was
short the calendar. Removed rather than flipped so old call sites fail
to compile. long_calendar sells near / buys far; short_calendar keeps
the old legs. Migration 5.0 §29, changelog, docs, example updated.
