Replace pjson with encoding/json/v2

Go 1.27 enables json/v2 by default, which pjson's copied v1 internals do not
build against. Follow apirouter and typutil onto encoding/json/v2:

- json.Marshal/Unmarshal everywhere; Response.Data becomes a jsontext.Value
- Time keeps MarshalJSON/UnmarshalJSON (json/v2 honours them) and loses the
  pjson-only MarshalContextJSON/UnmarshalContextJSON; nothing called them
outside pjson. The context-taking rest functions keep their signatures.
- omitzero instead of omitempty on the integer fields whose intent was "omit
when zero", since json/v2's omitempty no longer omits zero numbers
- go 1.27, typutil v0.3.0, CI on 1.27
