feat: filter and count creator collections by status and sort by last activity

The creator collections endpoint mixed curator semantics into its status
filter: "under review" only matched assigned pending curations, "published"
meant anything on-chain, and rejected re-submissions of approved collections
never showed as rejected. The creator UI also had no way to count statuses or
order collections by recent activity, since item edits and curation changes
never touch the collection's own updated_at.

- The `status` param of GET /:address/collections now takes the creator
  statuses draft, under_review, published, rejected and disabled. A single
  SQL expression over the latest curation and the on-chain approval state
  (approved, or approved before and now disabled) decides each status, and
  unknown values are rejected with a 400.
- Paginated responses include `counts` per status, honoring the search and
  type filters but not the status filter, so filter chips stay consistent.
- Listed collections carry `curation_status` and `last_activity_at`; both
  are stripped from public responses.
- New LAST_ACTIVITY_DESC/ASC sorts order by the latest change to the
  collection, its items or its latest curation.

The committee /collections endpoint and the existing sorts are unchanged.
