chore(dependencies): revert bson/mongodb upgrades because they break compatibility with MongoDB 4.2 (#907)

* chore(deps): revert bson and mongodb range bumps from dependabot
* chore(deps): tell dependabot to ignore bson and mongodb

These ranges are managed manually so downstream packages keep their
resolution flexibility; dependabot should not open PRs narrowing them.
