feat(version): take the version from Go's build information

Since Go 1.24, building a package in a git checkout embeds the version from the tag: v0.15.1 at the tag, a pseudo-version such as v0.15.2-0.20260929143058-141ad30347be after it, and +dirty for uncommitted changes, together with the commit time. internal.Version reads that with debug.ReadBuildInfo, so a release no longer means editing internal/version.go, and a build between releases names its commit instead of the last release. internal/version.go and the Makefile's -ldflags stamping are gone; CheckVersion and PrintVersion had no callers.

A build in workspace mode (go.work) embeds no version and no VCS information, so the Makefile builds with GOWORK=off: module mode, with the dependencies in go.mod, which is what CI builds too. A go build from the workspace root reports (devel).

The Docker images keep .git in the build context, so Go can stamp them, and the image workflows fetch the full history so the tags are there to derive the version from. Before, the images reported the version hard-coded in internal/version.go.
