chore(24): mirror live swarm secrets and the api image in docker-swarm.yml

- declare the phase-24 secrets external: true next to COUCHDB_USER, COUCHDB_PASS, REDIS_PASSWORD
- attach them to api, worker and transformer exactly as the live services mount them
- api keeps its unmounted COUCHDB/REDIS entries, commented as SEC-CFG-04
- api image is ${REGISTRY}/thinx/api:swarm; no environment line changed (D-06, D-10)
