ci: unpin image-builder from SHA, restore @main reference (#617)

## Summary

- Reverts the `image-builder.yml` SHA pinning introduced in #614
- All other SHA pins from that PR remain intact

## Motivation

`kyma-project/test-infra/.github/workflows/image-builder.yml` is a
kyma-project-owned reusable workflow. Unlike third-party actions, it
should track `@main` rather than a pinned commit SHA, as its release
lifecycle is managed by the kyma-project organization directly.
