Fix CI: skip coverage instrumentation on unstable Python job

pytest-cov's coverage.tracer C extension crashes with
"SystemError: module coverage.tracer uses unknown slot ID 85" on
Python 3.15.0-alpha.5, since its precompiled tracer isn't compatible
with this pre-release interpreter yet. Drop pytest-cov and override
addopts to strip the --cov flags inherited from pyproject.toml for
this job, since coverage tracking isn't the point of the unstable
Python smoke test.
