Revise mode tests for non-server-side primitives (#3382)

### Summary

Inspired by #3373 which caught a critical bug prior to release, revise
the tests that exercise `mode` in the different primitives (excluding
`BasePrimitiveV2` ones).

This refactors the `test_mode()` existing tests with the new one, and
replaces others that were being used to check for correct propagation.

* #3368 (avoid using of functions that return mocks)
* #2874 (partly - not having a clean modeling of `mode` contributed to
obscuring the issue)
