Add unit tests for excalc-mcp-setup and run coverage on all CI platforms

Refactors the CLI-path-resolution logic in excalc-mcp-setup into pure,
injectable functions and adds 16 unit tests covering platform-name
helpers, where/which output parsing, and the Windows fallback path
candidates, restoring workspace coverage from ~94% back to ~95%.

Also updates coverage.yml to run cargo-llvm-cov on ubuntu/macos/windows
(matching test.yml's matrix) and upload each as a parallel Coveralls
build, so the cfg!(windows)-gated fallback-path logic is finally
exercised and counted rather than always showing as missed on the
Ubuntu-only coverage run.
