refactor!: migrate logging APIs to slog for v1.0.0 (#312)

* feat: add instance-local slog defaults and URL redaction helpers

Use stock JSON output and standard printf bridges. Sanitize structured URL values and error chains before handler dispatch; keep caller extensions on slog.Handler.

* fix: use the caller logger during configuration loading

Add LoadConfigWithLogger and wire the CLI through it. Preserve the logger across the existing defaults reset without changing YAML semantics, rate limits, or fatal exits; cover startup diagnostics and legacy configuration behavior.
