test: convert the suite to Pest 5 (#28)

Every test file is now a closure-based Pest spec; none had to stay a
PHPUnit class, as nothing here runs in a separate process. composer test,
test:unit and test:coverage now run pest, so CI's
`composer test -- --coverage-clover ...` needs no change.

tests/Pest.php binds the 34 wp-mocks-coupled files to wp-mocks' TestCase;
the 9 pure-PHP files (JWT/provider crypto, MessageSealer, device key,
redirect and token rules, MessageRequest, PKCE store) stay on plain
PHPUnit as before. No file uses Mockery, so no MockeryPHPUnitIntegration
is needed. The shared output-buffer helper moved there as captureOutput().

All 43 files share the Fellowship\Tests namespace, so file-level helpers
and consts carry their file's name where the bare name recurred or was
too generic (adminBranchesEnrol(), ADMIN_BRANCHES_MEMBER).

Helpers that wrote state through Pest's test() proxy were changed to take
the test case or return values: the proxy hands properties back by value,
so appends and by-reference writes land on a copy (PluginBootstrapTest's
hook capture, MessageControllerTest's keypair). CoreUnitsTest imported
Brain Monkey's Functions\expect, which shadows Pest's expect() file-wide;
it now calls Functions\expect().

619 -> 619 tests, 0 skipped with OPENSSL_CONF set (150 without, as before).
Assertions 1366 -> 1364: two assertTrue(true) placeholders removed.
Line coverage 3043 -> 3044 of 3350: -1 JwtVerifier's ABSPATH guard
(covers() loads the class before coverage starts), +2 provider name()
lines now reached by an eagerly built failure message.
