Allow symfony/yaml 6.4, 7.4 and 8.0 (#585)

The plugin only relies on Yaml::parseFile(), which is available on every
supported Symfony release line. Restricting the constraint to the LTS
lines (5.4, 6.4, 7.4) plus the current 8.x line stops the plugin from
pinning the whole application to symfony/yaml 5.x.
