refactor(pipeline): drop defensive guards around chi and config access

Tidy-up of the two preceding commits, with no intended change in behaviour.

np.real() already returns the real part of a real array unchanged, so the
np.iscomplexobj() ternary guarding it in build_exafs_group() and in the HDF5
write payload did nothing.

clean_scratch and cleanup_feff_files are declared fields on FeffConfig, so
reading them through getattr() with a fallback was never going to fire. The
fallback also disagreed with the dataclass: getattr(..., "clean_scratch",
False) would have disabled eviction where the field defaults to True.
