fix: Align CowSwap TradeResponse with the API schema (#2752)

The `/trades` endpoint returns `executedProtocolFees`, `gasCost` and
`penaltyCapNative`, and none of them was in the TypedDict. The orderbook
OpenAPI schema marks the three as optional, so they use `NotRequired`.

It also documents `txHash` as nullable and every `ExecutedProtocolFee`
member as optional, so both are typed accordingly.

`test_get_trades` was comparing the full response dict, so it broke when
CowSwap added `penaltyCapNative`. It now checks only the expected keys.
