[#120] Improve API documentation and add EMAIL_FROM configuration

- Add OpenAPI schema summaries and descriptions for auth endpoints
- Add LoginResponseSerializer to document login response structure
- Update response status codes to match actual endpoint behavior (302 for verify, 400 for validation errors)
- Fix request/response serializers in schema decorators for forgot password and reset password endpoints
- Add EMAIL_FROM environment variable configuration across all deployment files
