fix: class names in the Permit.io and Shibboleth service definition samples

Three of the sample service definitions in the docs name a `@class` that CAS hasnt got, so copying one into a service registry gets you a Jackson `InvalidTypeIdException` instead of a service. Both interfaces involved are `@JsonTypeInfo(use = Id.CLASS)`, so the string has to be a real fully qualified name and theres no alias to fall back on. I've not stood a server up against these though, so I'm going off the package declarations rather then a stack trace of my own.

The Permit.io page publishes `org.apereo.cas.services.PermitRegisteredServiceAccessStrategy`. That class is declared `package org.apereo.cas.permit`, over in `cas-server-support-permitio`. It's the only one of the five third-party authorization strategies that sits outside `org.apereo.cas.services` - Cerbos, OpenFGA, OpenPolicyAgent and Permify really are in there, and all four of those pages are right.

The Shibboleth persistent id generator is published as `org.apereo.cas.authentication.attribute.ShibbolethCompatiblePersistentIdGenerator` on both the anonymous principal-id page and the SAML2 NameID page. Its actually `org.apereo.cas.authentication.principal`. Wrong in both places, so there's no correct one nearby to compare it against, which is probably how it lasted.
