Drop the Coveralls Homebrew trust step

coverallsapp/github-action v2.3.8 installs the reporter with the fully
qualified formula name, which auto-taps and trusts only that formula as
Homebrew 6 requires, so the workaround added two days before that
release no longer does anything. The v2 tag already points at it.

It was not free: brew trust only exists in Homebrew 6+, so the step
would fail the macOS job on an older image, and it had no schedule
guard, unlike the coverage steps it existed for.
