ci: test on Python 3.15 as a non-blocking job (#681)

Python 3.15.0rc2 is installable through uv, so the matrix can start reporting
on it well before the October release. The legs run with continue-on-error, so
a failure shows up in the job list without failing the build.

No Django release claims 3.15 yet: 5.2, 6.0 and 6.1 all stop their classifiers
at 3.14. Pairing 3.15 with every series would therefore park permanent red legs
in the matrix that say nothing about this package, so 3.15 runs against 6.1 and
main only, the two that will pick it up first.

The uv sync step now pins the interpreter with --python. Without it uv resolves
by discovery, which skips pre-release interpreters, and the 3.15 leg would have
quietly tested on whatever else was installed.

The pyproject classifiers stay at 3.14. A classifier is a promise to users, and
a job that cannot fail the build does not back one. MAINTAINING.md now says so,
along with the rule about which Django series to pair a pre-release with.

Verified locally with tox: py315-6.1 and py315-main both pass, 41 tests, on
3.15.0rc2 against Django 6.1.1 and 6.2.dev.
