fix: declare the PHP extensions this plugin actually uses (#11)

composer.json already declared ext-json, but not
ext-mbstring. A host without them would install the plugin happily
and fail at runtime instead of at install time.

Added: ext-mbstring
Evidence: mb_* in src/

ext-zip is declared only where ZipArchive is used at runtime. Every other
plugin's ZipArchive use is in build.php, which is build-time only.

Verified with the gate sequence ci.yml runs: composer validate, install,
audit, php -l, PHPStan, PHPUnit, PHPCS and build:production.
