* chore(deps): update dependency @astrojs/mdx to v8

* fix(docs): build docs with Sätteri instead of remark plugins

@astrojs/mdx v8 no longer depends on @astrojs/markdown-remark, so the
docs build fails on `markdown.remarkPlugins`. Switch the docs pipeline
to Astro's default Sätteri processor: GFM is built in, and the relative
link rewriter becomes a Sätteri mdast plugin.
