Add configurable WebFlux server mode (#2380)

Allow reactive applications to choose between the existing Reactor Netty
handler and LogbookWebFilter. Keep Netty as the default, fail fast for invalid
configuration, preserve logging of Spring Security rejections, and verify MDC
trace correlation in WebFilter mode.
