fix(ci): upgrade vitest and @vitest/coverage-v8 together to 5.0.0 (#1093)

Dependabot opened separate PRs (#1085, #1088) bumping vitest and
@vitest/coverage-v8 independently, but they must share the same major
version. The mismatch (coverage-v8 5.0.0 with vitest 4.1.11) failed CI
with "AssertionError: coverageFilesDirectory is required". Bumping
both together resolves it with no config changes needed; full suite
(638 tests), types, lint, and build all pass.
