Hold new field names to kebab-case, and list the ones that predate it (#2547)

The API is moving to kebab-case throughout (#2540). What stalls a migration like that is not
a decision to reverse it but a field added in the old style while nobody is looking, which is
how `job_stats` and `redis_connection_err` came to sit among nine kebab fields.

Three tests over every Marshmallow schema FlexMeasures defines: a name reaching the wire
carries no underscore, nor does a command-line option a field declares, and every name on the
list of 67 that predate the convention is still on the wire, so the list measures the debt
rather than outliving it.

The command-line side starts clean: all 34 fields declaring an option already spell it with
dashes.
