bedrock-hve.1: Pin bitstring size variables for Elixir 1.20

Elixir 1.20 warns when a variable is used inside size(...) of a bitstring
match without the pin operator, and CI compiles with --warnings-as-errors,
so the OTP 29 / Elixir 1.20 job failed while the older matrix entries passed.

Pin the three sites: header_size and directory_size in the chunk body and
directory checks, and the offset/size pair in the test helper that splices
corrupt fixtures. The pin is the meaning that was always intended here --
each of these matches against an already-computed length rather than binding
a new variable.
