* fix(deps): require Concerto v5 peers

Remove the temporary dual-major peer ranges and their syncpack exceptions so consumers resolve only the supported Concerto 5 runtime.

* fix(verification): update Concerto Docker verification pins to v5

Update the Docker verification pins in versions.json and documented
install commands in VERIFICATION.md to Concerto 5.0.0, resolving peer
dependency resolution conflicts with the ^5.0.0 peer ranges.
