Make Option a function type

An interface with one method needed an unexported adapter type to turn
each With* helper's closure into an Option. A function type carries the
same closure directly. The seal is unchanged: a caller outside this
module still cannot name *bridge.Config, so the three With* helpers
remain the only way to build an Option.
