ci(release): build release binaries outside Docker with remapped paths and stripped symbols (#703)

Each of the six release variants (file, openraft and umbrella, on amd64 and arm64) was compiled inside deploy/Dockerfile. They are now compiled natively on the release runner for their architecture with the build host remapped out of the binary through RUSTFLAGS (rustup home, cargo home and the workspace), and the job fails if any of those paths survives in the pre-strip output. The unstripped binary is archived as a variant-and-architecture-qualified symbols tarball with a checksum, the shipped copy is stripped with the toolchain's llvm-strip, and the image job assembles the new runtime-only deploy/Dockerfile.release from the artifact, smokes it, checks its architecture, pushes it, records the digest, and attaches digest, symbols and checksum to the GitHub Release.

deploy/Dockerfile keeps the from-source build for local use with a runtime stage identical to the release image. Both runtime stages move from bookworm-slim to trixie-slim because the release runners link a newer glibc than bookworm provides.
