Update Architectury to 21.0.7 for the NeoForge bump

NeoForge removed ContainerScreenEvent.Render.Foreground somewhere before
26.2.0.75, and Architectury 21.0.6 still references it, so the dev client
died during mod construction:

  net.neoforged.fml.ModLoadingException: Architectury (architectury) has
  failed to load correctly
  java.lang.NoClassDefFoundError:
  net/neoforged/neoforge/client/event/ContainerScreenEvent$Render$Foreground

No NeoForge in range can satisfy both, since 26.2.0.75 is the minimum The
One Probe requires and the class is already gone there. 21.0.7 no longer
references it and accepts neoforge [26.2.0.40-beta,).

Server-side game tests did not catch this: the class only loads on a client.
