ci: name test jobs go previous and go current

The test job names carry the Go version from the matrix, and those names
are required checks in the master ruleset. When the minimum moved from
1.25 to 1.26 the jobs were renamed, the ruleset still asked for
`test (<os>, go 1.25)`, and every pull request waited for checks that
could no longer arrive.

- Name the matrix cells by release role, `previous` and `current`, so a
  Go release no longer changes any job name.
- Resolve them through setup-go's `oldstable` and `stable` aliases, the
  latest patch of the previous and the current minor release.
