fix: unbreak non-Linux builds and compile FreeBSD in CI

The PSS opt-in in 006acaa added ProcessGroupCollector::memory_source, which
only the Linux sampler reads: FreeBSD samples through sysinfo, which exposes
RSS alone, and unsupported platforms collect nothing. `warnings = "deny"`
promoted the resulting dead_code lint to a hard error, so cargo build failed
outright on every non-Linux target, FreeBSD included.

#[expect(dead_code)], which rustc itself suggests, is wrong here: the
#[cfg(test)] tests do read the field, so --all-targets would trip
unfulfilled_lint_expectations and move the failure to the Linux clippy job.

The Check job now runs cargo check --target x86_64-unknown-freebsd. It
compiles the 12 FreeBSD cfg-gated items — the sysctl CPU reader, the sysinfo
process sampler — that no job had ever compiled, and it reproduces this bug
with the fix reverted. --all-targets is not possible from a Linux host:
dev-dependencies pull aws-lc-sys, which compiles C against a FreeBSD sysroot.

Drop the macOS build and release archives. That job compiled neither
platform's sampler, so it was never covering FreeBSD, and the archives have
no demonstrated users: across 28 releases the darwin tarballs drew 17
downloads against 444 for the Linux packages, none ever on aarch64 and none
of any kind since 0.11.1. Building from source on macOS is unaffected.
